I am seeing more larger restaurants that can afford to install an automatic timed reminder bell that goes off in preset minutes, like 10, that prompt all kitchen employees to stop and wash their hands. Some have recorders in the bathroom that employees must key in their assigned number at the sink and it records the frequency and duration of each time they wash their hands during their shift. Certainly not fool proof but a step in the right direction if one can afford to pass that onto to menu. Believe it or not those Hand Washing signs do work and are better than nothing as most restaurant employees have the attention span of a puppy. Not the brains mind you, just the attention span. LOL
