Here's a rice porridge recipe adapted from a cookbook called Vegetarian Rice Cuisine, which was more to my liking than the oatmeal porridge:

+ 2 cups cooked rice (I used white rice, but recipe calls for brown, so I'm trying that next)
+ 1.5 cups lowfat milk or rice milk (I used combo rice milk & coconut milk)
+ 1/4 cup maple syrup (recipe called for 1/4 cup plus 2 Tbsp, but it was plenty sweet to my taste with just 1/4 cup)
+ 1/4 teasp ground cinnamon or nutmeg (I used both)

Combine all the ingredients in a saucepan and cook for 8-12 minutes on low heat, stirring frequently. I also processed with an immersion blender, my new best friend! It was a little thick, but very tasty.

Enjoy!
