OK, here is another idea for the good old meat loaf. Use gr. Turkey instead. It is great moist and easier to swallow. add l can Italian stewed tomatoes, and half cup of oatmeal, chopped onions & mushrooms, Worcestershire sauce, and egg substitute. Garlic can be added if you wish.
Yes, the Red potatoes are great. Especially in Clam chowder. Another good and easy meal.

I had my PEG removed Feb. 5th after about 3 months. I had begun eating chowders and things by January, but as time has progressed so has my ability to eat different things. All of these foods being discussed here sound delicious and I have tried the chicken legs and thighs which are easy to eat, but the meatloafs (both chuck and turkey) I've got to try. I suppose the most difficult aspect of the radiation is the way it takes away the pleasures of eating... but I can say from experience that it does get better. My biggest problems are manipulating food with 1/3 of my tongue gone and it now twisted sort of up on its side, combined with bare gums where my two bottom molars on each side were removed (I can't stand wearing my partials), tooth sensitivity (to cold), and limited saliva. It just takes longer to eat now than it did, but having the ability, alone, is plenty to be thankful for. Oatmeal has taken the place of ice cream at night, so I suppose it's not all bad. I just can't seem to gain any weight... but some say that's ok... when I started I was at 236... when I finished...165... now, only 170, and no matter what I eat I can't seem to gain any of it back. So, I guess some of these oddities are blessings in disguise... besides it's not all bad, huh? and it could, of course, be much worse. Keep those recipes and menus coming folks.
