Today I found another food I was able to eat. Zucchini squash was always a favorite of mine. I grew zucchini in my garden and was thrilled when I was able to eat it tonight.
peel a medium zucchini and slice it about 1/4" thick
beat 2 eggs with 1/2 cup milk
melt butter (I use unsalted) in a fry pan
dip zucchini slices in egg mixture
fry til soft and turns golden brown

Joined: Sep 2006 Posts: 8,311 | Another variation is to just put sliced zucchini, yellow squash and Spanish onions into a deep fry pan, add butter and a slice of bacon (if you dare) and cook covered on medium heat until the veggies are almost mushy. Yummy

Jersey corn is in. As long as you have front teeth, you should be able to eat it, otherwise cut it off the cob.

History Leukoplakia bx 8/2006 SCC floor mouth T3N0M0- Verrucous Carcinoma.
14 hour 0p SCC-Right ND/excision/marginal mandibulectomy 9/2006, 4 teeth removed, flap from wrist, trach-ng 6 days- no chemo/rad.
6 ops and debulking (flap/tongue join) + bx's 2006-2012.
bx Jan 2012 Hyperkeratosis-Epithelial Dysplasia
24cm GIST tumour removed 8/2013. Indefinite Oral Chemo.
1/31/16 passed away peacefully surrounded by family

Thanks guys for all the great zucchini recipies. Very soon, I will be over loaded with zucchini. Probably be eating it daily.
When I found out in April that my cancer had returned, I wasnt sure if I would bother with a garden or not. By the time the tomatoes and zucchini were ripe last year, I was unable to eat anything. Im so glad I did decide to do a garden this year.
