No we do make them for our Papas Rellanus, Balls for short. Very popular appetizer, deep fried mashed potato balls stuffed with either our Picadillo or our Roast Pork

David,

Does that mean I have to peel off the crispy part and mince the stuffing? smile I'm just giving you a hard time. They sound fantastic!

BTW we MIGHT be able to get there Oct 10,11 12 weekend after all - maybe Friday night or Sunday afternoon. Just have to see how things go with set-up and break-down for our Sat night event. If we do, I'll ask if your wife is in and introduce myself.

Black beans and mashed taters are good. LOL Today I learned how to bake sweet potatoes and made one of the best meatloaves I ever come up with. LOL I don't cook, I invent. As they say.. Don't let your meatloaf. This is usually good for at least a smile. If not, sorry.

I will have the kitchen make you some mashed potatoes without the crispy's even though I like that part.

Hope to meet you but keep in mind WE ARE CLOSED SUNDAY's. Thank the Lord, our only "day off".

David,

Thank you for telling me that you're closed on Sundays. Sun. Oct 12th is my birthday and I'm pretty sure the plan was to take me there for lunch after break-down of our Cotillion. Friday night we might still be setting up until long after you close. (It takes a lot of time and "stuff" to turn a modern banquet hall into a medieval one.) No matter, I come down to your area at least 6 or so times a year, so if not now, then soon.

(And I used to love "crispy", Still do, just can't have it. Oh well, maybe some day - if and after teeth.)
It's very important to my wife's Cuban restaurant!!! Can't imagine black beans and mashed potatoes.
Maybe not mashed potatoes, but a loaded baked potato with black beans and cheese....

I'd go for that

Whatever floats your boat!! If a customer is willing to pay for it, I'll get the kitchen to make it. That's my CPA way.

Plaintains are delicious and very soft when ripe. I have enjoyed black beans with plaintains and sour cream. Davis, is this a just a Central American dish or is it also Cuban? We had plaintains baked with cinnamon today as a sweet dish for Rosh HaShonah.

There are basically 2 ways that Plantains are prepared. One is cut when really ripe and deep fry. They turn out very sweet and taste like a deep fried banana would. They are called Plantanos Maduros, i.e. sweet plantains. Two, they are cut when not ripe, pounded flat, deep fried and served with a salted butter garlic sauce. They are called Tostones. Two completely different tastes and it really depends upon where you grew up which one you were accustomed to. Most Cubans grew up with the sweet ones and most Puerto Ricans are accustomed to Tostones. There are also plantain chips and my wife crushes them up and makes a batter to use with a grouper fillet that has won awards.

I LOVE how this thread has grown and changed - like some sort of metamorphosis. And the recipes are sounding pretty darned good! Just makes me want that saliva to return even more. And if I can just get those teeth I'll be all set. smile
