you might check out the banquet frozen dinners. they are really good and inexpensive too. their portions are a little smaller than the lean cuisine, but they have a lot of different meal varieties. i hope you will be able to eat the peaches and baked potato. the peaches are great by themselves and even better with vanilla ice cream. yummy! let me know how things go. you're welcome!

Try the Marie Callendar frozen dinners also - excellent food and very high calories.

On the fresh veggies topic - we eat a lot of those around here and thankfully have such a warm climate that we get stuff most every month. Anyway - I tried the new ziplock seal & steam bags - they are AWESOME. Put your veggies, seasoning and a little oil or butter and pop in microwave. Taste great! You can also do chicken and other meats. Check them out on the internet. I love them, veggies taste so fresh and there is no pot to wash. You can also make them as soft or as al dente (crisp) as you like. Based on cook time. And if you have fresh frozn veggies you can also cook frozen in there.

Okay. This weekend I am going to take some time and run some of my pressure cooker recipes.

Ed - I know what you mean... I had to buy another one several years ago and the wife simply couldn't believe..... smile

Ya can't beat em for the best chicken broth you've EVER had !

This one is easy
LARGE Package of chicken thighs
One softball sized sweet onion chopped
Tablespoon of seasalt

Toss it all in the PC with about a quart (liter) of water
Cook at 5 PSIG for 45 minutes

I add tomatillos for that nice salsa verde tang without vinegar and even a dash of green chiles. I finish it off with some chopped up potatoes.

A pot roast (chuck or rump roast) with some carrots and potatoes and onions on 8 PSIG for 45 minutes will give you meat that melts as you eat it and some incredibly soft veggies and even if you don't want to mess with the most tender meat, you can just drink the broth or take out the meat and use a hand grinder and it makes a simple and soft soupy concoction. I don't know the official name but they have sharp baldes and are used to puree sauces. I also use them for fruit slushes with protein.

I wish I could eat somethng spicy, but for now I am stuck with just bland foods. I know what you are talking about with the hand grinder. My grandmother used one to make ham salad when I was a kid. Im going to have to look into getting a pressure cooker and meat grinder.

Thanks for the idea about the ziplock seal & steam bags. I wondered if they worked or not. I eat very small quantities of food at a time, so that is really helpful. I hate to waste food.

On most all pressure cookers you have a pressure setting. My cooker has setting for 5, 10 & 15 PSIG.

WARNING PHYSICS LESSON FOLLOWING:
5 PSIG is the 5 Pounds per square inch GAUGE, or pressure above atmospheric pressure which at sea level is approximately 14.7 PSI.

Hi Christine,

Here is the recipe for Blueberry-Peach-Pomegranate Smoothie

1 cup frozen blueberries
1 cup non fat vanilla yogurt
1 cup of pomegranage or pomegranate-blueberry juice
1/2 cup of frozen peaches (can be done with or without peaches)

In a blender, combine all ingredients. Process until smooth.

Makes 2 servings. Nutrition for serving: 180 calories and 41grams of carbs and 4grams of protein.

this is good for you and packed with antioxidants.
