I have noted that many OC patients are aware of the metastasis to the lung pattern, but I have been told that we must also be mindful of pains in the ear as a sign of possible distant met....?

Any one else heard (pun intended) this? confused

Ear pain can indeed be one of the signs of oral cancer. It can be referred pain from an oral site (not actually involving the ear itself), or it can be a local spread of the primary cancer to this area in its immediate vicinity, usually from the oropharynx. Distant mets are usually thought of as thoracic organ metastasis rather than head and neck locations.
