There are basically 2 ways that Plantains are prepared. One is cut when really ripe and deep fry. They turn out very sweet and taste like a deep fried banana would. They are called Plantanos Maduros, i.e. sweet plantains. Two, they are cut when not ripe, pounded flat, deep fried and served with a salted butter garlic sauce. They are called Tostones. Two completely different tastes and it really depends upon where you grew up which one you were accustomed to. Most Cubans grew up with the sweet ones and most Puerto Ricans are accustomed to Tostones. There are also plantain chips and my wife crushes them up and makes a batter to use with a grouper fillet that has won awards.
