But within that restriction I'm constantly on the lookout for good recipes--soup being the big staple for me.
I was at a museum with my husband and we ended up having lunch sharing a table with 2 women and one of them was describing this creamy soup she had just tried making with apples, squash, onions and chicken broth. Today I looked up some recipes on the web and then basically combined them for a yummy soup I hadn't made before.
1 very large sweet onion chopped up 4-6 apples (I used Cortland) sliced thin one large (or 2 small) butternut squash chopped into 1.5 " squares @ 1 stick butter 3 cups chicken or veg broth (I used chicken) 1 cup heavy cream and strong tasting softish cheese (the recipe that ahd this part suggestred blue cheese. I didn't have that but did have some boursin with garlic which worked)
Chop up onion and squash and put in baking pan surounded by chicken broth--dot tops of onions and squash with butter. Cover pan with foil and bake until soft (I did @ 45 min).
Peel, then Slice apples thin, and sautee in can with lots of butter and a little nutmeg.
When everything is baked or sauteed puree apples/onion/squash and broth in blender in batches.
Warm heavy cream and melt cheese in it then whip until it is thick.
Serve squash soup with cheese-flavored cream in a dollop on top.
Yummy!
