You can also use gyokuro. It is usually the first spring pluck that is sold and it is cut then placed in wooden boxes to dry so the sun never damages the tea. It is typically sipped in smaller cups but doesn't have to be.
The Sencha Hiki is grown in the Hiki Gardens of Wakayama about 250 miles from Tokyo. It is the first harvest also. The area is known some of the most sacred where the monks first settled. It pops up when different traders have batches but nothing treated as delicately as Special Teas.
