Protein is very important to the healing process. Here is a link of easy foods. Maybe try some canned peaches, yogurt, puddings, milk shakes to help get more calories daily. Im surprised that the feeding tube was removed before he was more stabilized. Other countries do things differently. A couple times, I tried to eat rice and almost choked to death! If he can eat rice with milk then he should be able to eat other things too like oatmeal and sof scrambled or poached eggs.
