Joined: Dec 2003 Posts: 2,606 Likes: 2 | I used to go only with Special Teas but the sold to Teavana and dropped the greatest Japanese green tea in the world.  You can also use gyokuro. It is usually the first spring pluck that is sold and it is cut then placed in wooden boxes to dry so the sun never damages the tea. It is typically sipped in smaller cups but doesn't have to be. The Sencha Hiki is grown in the Hiki Gardens of Wakayama about 250 miles from Tokyo. It is the first harvest also. The area is known some of the most sacred where the monks first settled. It pops up when different traders have batches but nothing treated as delicately as Special Teas.

Do not want to get hooked on the expensive stuff. Even good Sencha is much more reasonable. Thanks for the tips. I'll do some experimenting using alkaline water to start and measure pH with different green teas.
