Congradulations David!!! I understand that steak is a biggie!

My hubby can eat tenderloin med rare, but not all red meats; they are too textured and not moist enough. He never liked "boiled" meats like pot roast, but chicken thighs are his favorite and fresh fish (even fried) if I don't dry it out. Early on, gravy was his best friend along with milk. He is still trying to get spice into his meals (he was a hot food/hot pepper fanatic before dx), but anything with pepper in it stings. He also, hates white meat chicken, no matter how it's cooked, and loves pork if it's "just done"...tenderloins are the best, with gravy on it.

He can even eat barbequed chicken if I tone down the sauce with more ketsup and he enjoys it.

He told me the secret is in the cooking. If I cook "it out", food becomes too dry. And I don't mean undercooked...I mean watched until it is the right temperature, with a meat thermometer.
