Its been a while since you posted, you are not forgotten. Im glad to hear your dad is coming along and is cancer free. Im hoping the 'shadow' turns out to be nothing. It takes a while after treatment ends to begin to eat.
A couple things your dad might enjoy with just starting to eat. Maybe try yogurt, pudding or chocolate milk is soothing to the throat and mouth.
