FYI - Tip on ginger. You can just thinly slice the fresh ginger root and steep in hot water. No need to grate then have to strain as well as an extra utensil to wash.

If you really want to get all the extraction then cut a bit thicker slice and use one of those meat tenderizer mallets using the sharp pokey side. One mash and the ginger is broken down yet remains intact.

You can take a clove of garlic and mash it with the same effect.
