There, I figured that title would get your attention.

I have a cake recipe that is so simple it's dangerous. I'm sure it goes by other names but I call it 321 cake.

Go buy two boxes of cake mix, one must be angel food cake, the other can be anything you want; with sugar, without sugar, gluten free, anything else will work.

Mix the two boxes together. Store the mix in a ziploc bag in the fridge.

When you're ready for cake, mix 3 servings of cake mix with 2 servings of milk (any kind), stir until it looks like cake batter. Then 1 minute in the microwave on high and you have hot, fresh cake.

Some people call it the most dangerous cake recipe on the planet because you can have fresh cake before the commercial break is over on your TV.

For serving size I like to use a coffee scoop. You can use a tablespoon or teaspoon if desired, but that won't give you much cake. Using the coffee scoop I get a really good size piece of cake, dimensions roughly 5x5x1.5 inches. .

Slather on some ice cream and none of us should have any trouble getting 2500 calories per day.

I've added peanuts and chocolate chips before baking, but they always sink to the bottom of the bowl, not a problem.

Actually, when you put ice cream on hot cake, it's melting softens the cake nicely. Now, I'm only in week 2 of rads so we'll see how I do with it come week 5 or 6.

Oh My Goodness! I just tried the cake and it is AWESOME! I mixed up the Angel Food Cake with a box of Red Velvet Cake (My daughter's favorite cake). I only made a little cake but it was light and springy and this is definitely a keeper. I'm making this for my daughter's birthday coming up soon. And it really only took ONE minute! Thanks, Tony!

Xantippi - I found it via that well known search engine on the internet.

A bridge partner had given me a different one minute microwave cake recipe. It had obvious errors in it because it was the worst tasting cake I've ever had, I mean really gross. (Problem was it called for 2t of baking soda instead of 1/2t. Can you imagine what 2t of soda does to one piece of cake).

Anyway, I tossed that recipe and a little search brought me to this one.

Enjoy, I had a really nice piece of cake with ice cream last night as I watched Louis CK, comedian on Youtube. That boy is twisted kind of funny, and the cake was good too.

I just made it three times: One time in a 6 inch square container, then in the very cup I mixed it, and then in a 4 inch container which was my favorite size because it had just enough space for some chocolate ice cream.

I used Betty Crocker Angel food cake, Betty Crocker yellow cake, and blue diamond almond milk. I used the coffee measuring scoop in the ratios suggested.
My hubby loved it too.
