It can be a full 2 years before your body is back to normal. Even if you would take in 5000 calories every single day for 3 months straight, I doubt you would gain anything right now. Your body is still trying to rebuild itself from what it has been thru. Try your very best to take in 2500 calories every day and try to make your diet the healthiest you can.
I lost 65 pounds during my first battle with OC. It took me 5 years before I began to gain weight again.

I've maintained my current weight even though I've increased the amount I'm taking in.
I attribute this to my body healing and needing additional calories. My team concurs.

I ate everything and anything and the doctor told me if I didn't gain weight he felt my body would not recover. A few (short) months later he asked if I was still consuming mass amounts. I said yes...he said I could back down any time since I was now "huge" in his words. The weight stayed the same for 4 1/2 years after that.

I was down to 130lbs from 245lbs in a few weeks from cancer cachexia, also known as wasting syndrome, and other illnesses. I'm now between 195-200lbs, but that took almost 4 years to gain back, although I was in several treatments between. My highest weight ever was 275lbs at 5'10", so I'm at the point if I want to bulk up I can, and started exercising with weights recently, and I get big just looking at weights lol, and only go occasionally. I'm comfortable at this weight, and should not gain more due to kidney disease, again from chemo. Muscle, fat has memory, so you will gain back the weight to your highest level faster than someone who wasn't, and used to do it many times since I was 16, losing weight, gaining weight at will, sometimes losing 20, 30 a week, and up to 100lbs in a year, and back up again, but losing gets was harder and harder if you want that one day. It's more difficult to gain after Tx with the body fight cancer, malabsorbtion in the digestive track and stomach, metabolism changes, and altered diet.
There are ways to increase your appetite, and weight with prescription drugs, OTC vitamins, exercise and diet. Even sight, taste, smelling foods, food combination, colors can increase your appetite.
Good luck.

Glad to hear from you. I am 5'7" and now 65 (big ugh). Pre Tx I weighed 160 and lost 30 to Tx and as you know an avid cyclist. I couldn't gain a pound my 1st year post Tx but I really didn't mind because I found riding hills was easier. Flash forward 7 years I still exercise 6 to 7 days a week and am currently gearing up for my next Century in Nov and I weigh 136 and I personally feel that I am in better shape at 65 than I was pre Tx at 58.
